Easy outdoor Fajitas’

My wife and I try to have my parents over as much as we can. When they come over I am motivated to cook. Here is what I did his last weekend. This is for 6

This is my outdoor fajita’s on the patio with the pancake griddle.

I marinated 4 chicken breast sliced up in taco seasoning and ½ cup olive oil. Do this first thing and by the time the chicken is marinated enough all the rest of the stuff will be cut and ready to cook. I am lucky my Dad likes to help. He cooked the chicken right before I was finished cutting and mixing the condiments. Next time I will video or take  pictures.

Julienne (Thin strips) some mini bell peppers red, orange, yellow. These are sweet and I find my kids like them allot any kind, (. I like them too. I also Julienne a large sweet white onion. Really any onion you like is fine. As for portions just figure a handful per person 2 handful’s if you have hungry teens. 2 ea.

I then made guacamole, corn salsa, and refried black beans. Just e-mail me and I will be happy to share my recipes. kkuybus@comcast.net All this stuff takes no more than 15 minutes to prepare. Or just buy it at Cost Co Trader Joes or your local King Soopers.

On our patio table I plugged in the pancake griddle and put it on 325 F and gave my dad some tongs and the marinated chicken.  Cook Chicken approximately 3 minutes each side on the griddle. Don’t over cook! Take off griddle and hold in bowl next to griddle. My dad did a perfect job. In small bowls’ surround the griddle with the guacamole, corn salsa, sour cream, salsa of choice, heated refried beans, cheese if desired.

I now covered the griddle with the peppers and onions but not too high you want all  the veggies to touch the griddle add olive oil if needed the first batch wont need too much oil because of the olive oil on the chicken. Let the mix caramelize a little on one side and then turn and add some chicken about three strips per person. I then throw a fresh whole wheat or flour tortilla over the top to heat it up. (Easily 2 at a time.) Grab the first lucky person’s plate and flip the clean side of the tortilla down on their plate and place chicken, onions and peppers on the tortilla. Let your guest fix it up how they want it. Let them know not to load it up too much because they are not so easy to eat when too full.

Buyers have until October 4, before

Toured with  4 buyers this week. It is so much fun to look at properties with buyers new to the area. Most of the time they have a bit of sticker shock. Lately it has been the opposite home values are really good in the REO Bank owned areas. Lots of deals out there for buyers with good credit. Call me to get pre Qualified with a local lender.

Buyers have until October 4, before HUD will increase the rates borrowers pay


The annual fee is expected to rise from the current rate of 0.55 percent to 0.9 percent of the total loan.

This bill also gives the FHA the authority to raise the annual fee as high as 1.55 percent.
